In Season: Campfire Cooking

Summer is a time when everyone wants to get outdoors and camping always seems to be a part of those summer outdoor activities. But, what if you’re a foodie who wants to also enjoy the excitement and tranquility of camping in nature? It doesn’t seem like there’s too many ways to get creative in the campfire kitchen, but we’re here to help you enjoy the outdoors while also making delicious meals.

You’ll need to prepare a bit more if you want to cook a real meal as opposed to snacking on basic, non-perishable camping foods. Below are a few items you should bring with you to make your campfire cooking experience easier (some recipes may require specific tools that are not on this list).

  • A grill grate for your firetop
  • Cast Iron Skillet(s) which can handle extreme heat
  • Silverware
  • Mixing Bowl
  • Plates
  • Tin Foil
  • Steel tongs
  • Cooler with lots of ice for perishable foods
  • Olive Oil

Tin Foil Food Bowls

You can get creative with these. Add anything you like! No ingredients are off the table.

Jambalaya

Things you’ll need

  • Large sheet of tin foil
  • Cooking Spray
  • Tomatoes
  • Peppers & onions
  • Garlic
  • Instant Rice
  • Pre-cooked Smoked Sausage
  • Shrimp
  • 1 can of Chicken Broth
  • Salt & pepper
  • Cajun Seasoning
  • Corn

In a bowl, mix together all ingredients. Spray a large sheet of tin foil with cooking spray. Place ingredients in the center of the tin foil. Fold the tin foil into a square and roll the edges so nothing leaks. Place the tin foil pack on the grill over the fire and cook for 25-35 minutes, flipping half of the way through. Return the foiled ribs to the grill and cook for an additional two hours, or until internal temperature reaches 205℉.

Kabobs

Grilled Pineapple Chicken Kabobs

Pre-cooked chicken is not mandatory for this recipe as diced chicken can be easily cooked. However, cooking beforehand will speed up the process.

Things you’ll need

  • Canned pineapple
  • Sliced onion
  • Chicken
  • Honey
  • Cilantro
  • Lime

Combine ingredients in a ziplock bag and let marinate for an hour or more. Place food on skewers and heat over fire. If using raw chicken, let chicken cook thoroughly: around 10 minutes. Let cool and enjoy!

Cast Iron Skillet

You will need a grill grate over your fire for this recipe.

Omelet Frittata

Things you’ll need

  • Onions
  • Cherry Tomatoes
  • Basil
  • Cheese
  • Salt & pepper
  • Olive Oil

In a bowl, beat eggs, salt and pepper. Heat oil in a skillet and add onions until they brown and become soft. Add in tomatoes and let cook until slightly softened. Add in egg mixture, basil, and cheese. Let cook until eggs are set (timing will vary depending on fire temperature). Flip the egg if needed and once done, fold over. Remove from heat and plate. Top with cheese and basil if desired.
