For our Foodie Friday spotlight this week, we’re spotlighting an authentic Japanese spot known as Umaido Ramen & Sake in Suwanee!
Umaido Ramen & Bar is the type of local establishment that has a cult following. Loyal regulars frequent this popular ramen bar to celebrate special occasions with friends, along with new visitors who discover this hidden gem in Suwanee. What makes this ramen bar stand out is that they make all of their noodles in-house. In fact, they partnered with another Japanese restaurant named Hajime to develop a special type of noodle that is resistant to becoming nobiru. Nobiru, as explained on Umaido’s website, is the Japanese name given to a noodle that has absorbed soup too quickly and become soggy. You’ll likely notice as you slurp on your ramen that Umaido’s noodles stay firm for a longer time compared to other noodle varieties! Umaido also offers a special Kae Dama system where you can get an extra serving of noodles when you’ve almost finished your first serving! All you have to do is reserve enough soup for the extra noodles and let your server know you’d like an extra ball of noodles.
While everything from Umaido’s menu is truly delicious, we’ve picked the tonkotsu ramen to highlight! Featuring a rich pork bone broth with chashu pork, green onions, mushrooms and a soft-boiled egg, this ramen is the epitome of perfection. It’s perfectly rich and balanced well by the earthiness of the mushrooms and brightness of the green onions! The noodles are the true star of this dish, though, adding the perfect amount of chewy and springy goodness.
