In Season: a 2022 Guide to Meal Prep

The new year is here, and if you’re anything like the rest of us, chances are you’re starting a new diet… or at least trying to eat healthier in your day to day. Unfortunately, the majority of the resolution makers out there won’t stick to their new year goals past month three. This isn’t because we don’t want to be healthy; it happens because shopping for healthy foods is pricey and cooking every meal isn’t sustainable.

Thankfully, nutritionists across the country have come up with a solution to that problem. Meal prep — Meal prep can save you a lot of money because it’s designed to utilize the same ingredients for multiple meals. It also saves time because rather than preparing breakfast, lunch and dinner every day, you’ll prepare all of your meals for the week at one time.

But don’t run to the store to grab 10 pounds of ground turkey just yet. We’ve come up with two simple, healthy meals you can make from just the ingredients below for a little practice. By healthy, we mean recipes made out of mostly whole, non-processed foods. If you’re tackling a specific diet this new year, such as Keto, Paleo or you’re going vegan/vegetarian, you can still use our meal prep guide. Simply substitute a few ingredients to fit whatever your preferred diet is. Try it and see if meal prep is for you in 2022!

Spicy Stuffed Sweet Potatoes & Chipotle Turkey Burritos

2 Onions
4 pounds Ground Turkey
2 packets of Taco Seasoning
Can of Chipotle Peppers
5 Sweet potatoes
2 Bell peppers
Can of Chicken Broth
Can of beans
5 Tortillas
2 Tomatoes

Prep: 

Start by chopping up all of the veggies. When chopping the sweet potatoes, make sure to leave 2.5 potatoes unchopped. These will be baked for the stuffed sweet potato recipe.

Wrap the un-chopped sweet potatoes in aluminum foil and bake in the oven at 400 degrees for 45 minutes.

Cook all of the ground turkey in a pan on medium heat. While cooking, add in all of the onion, both packets of taco seasoning, the chipotle peppers and the bell peppers. Once the meat is cooked and the veggies are soft, store half of the turkey in the fridge. 

Still on medium heat, add one cup of chicken broth, all of the beans, half of the tomatoes and all of the chopped sweet potato to the turkey still on the stove. Simmer until potatoes are soft. 

Place the ground turkey filling into another container and refrigerate.

Store baked sweet potatoes in the fridge as well.

assembly: 

Whenever it’s mealtime, grab half of a baked sweet potato, top with the ground turkey and veggies, heat in the microwave, add shredded cheese, sour cream and fresh tomato to the top and enjoy!

For chipotle turkey burritos, grab the ground turkey & sweet potato filling you already prepped, add to a tortilla, warm in the microwave and top with shredded cheese and fresh tomato!
