Eating Green This Spring: In-Season Recipes

Vegetarian dishes and mock meats, wholesome soups and fabulous fiber, welcome to the spring where we’re eating green! It’s that time of the year when your mental health tells your gut health that you need a double dose of high fructose corn syrup right now but what you really need is a good cruciferous veggie. I’m here to be the angel on your shoulder, to show you delicious vegetarian recipes that not only taste fantastic but make you feel great too! Now is the time to shop seasonally and discover what veggies best suit your spring diet!

Adding a couple of vegetarian dishes to your week can have an immensely positive impact on your health, so here are a few of my very own favorite dishes that help me stay happy, healthy, clean and green throughout the spring season!

If you are a meat-and-potatoes kind of individual, then I have just the dish for you. You’ve heard of portobello mushroom steaks by now, but have you ever tried one? Savory, juicy, with just a bit of char but light in a way that a ribeye never is, portobello mushrooms absorb flavor like a dream.I prefer to go all the way and prepare my mushroom steaks in a marinade, then grill and serve them with a side of creamy roasted garlic mashed potatoes and some pan-fried broccoli. Impressive, flavorful and easy, it fills you up and it pairs really well with a nice glass of cabernet. This is a dish perfect for date night!  

Or, you could skip date night and go right into Marry Me Beans! This dish is a favorite of mine and has received rave reviews from many tummies in my area. Sun-dried tomatoes, caramelized onions, garlic, butter and basil – what’s not to love? Adding cannellini beans to the mix only makes this dish better, giving you the boost of protein and fiber you need to get through the day. I like to serve this meal with crispy garlic bread on the side for dipping and if you have any leftovers in the morning (you probably won’t), try heating the Marry Me Beans in a pan and crack a few eggs in there for a flavorful and creamy shakshuka! 

Overall, the most important aspect of vegetarian cooking is to find produce that is in season. The fruits and veggies always taste and look better when they’re ripe, so be sure to do your research to find out what produce you can buy this spring to start your own list of vegetarian recipes.
